Ingredients for the Best Buffalo Chicken Salad Sandwich

This recipe is SUPER simple. The flavor mimics that of buffalo wings, but with a creamy zing, and the carrots and celery are no longer feeling sad off to the side. I love a good shortcut, so instead of cooking chicken, we are going with your favorite grocery store rotisserie chicken. THE WHOLE CHICKEN. 

Here’s what you will need for this recipe:

  • 1 whole rotisserie chicken, shredded
  • 1 cup celery, diced
  • 1 cup matchstick cut carrots
  • 1 cup Duke’s Mayonnaise
  • ⅓ cup hot sauce, plus more depending on your preferred level of heat
  • 2 tablespoons white vinegar
  • 1 tablespoon granulated sugar
  • ½ teaspoon onion powder
  • ¼ teaspoon granulated garlic
  • ½ teaspoon paprika to garnish

Hot or Not

I love most things with a little heat, and this recipe is no different, but it is SUPER simple to tailor the level of heat to your preferences. 

For more heat, douse the shredded chicken, celery, and carrots with your favorite hot sauce and toss to coat. This is my preferred way to make this recipe. I love the spice paired with the creaminess of the mayonnaise-based dressing and the crunch of the veggies.

Choose your favorite hot sauce, but know what you are getting into! I prefer a hot sauce with a vinegar base and cayenne peppers. This is going to give you the most classic buffalo flavors, but if you want to go bananas with a sauce made with hotter peppers I won’t try to stop you. 

For less heat, skip drenching the chicken with hot sauce BEFORE adding the dressing. You can also cut the hot sauce called for in the dressing by half. This will make the chicken salad a little bit thicker, but the consistency is still great. Adding a tablespoon of honey can also sweeten things a bit further and cut some of the heat. 

Make it a Platter

We make this buffalo chicken salad often. It is DELICIOUS, and I love having a container of it in the fridge for quick lunches and snacking, but also for when my husband comes in the door starving and I am not interested in caring about what to feed people. 

It is also REALLY great as a make-ahead appetizer and works well on a platter with chopped veggies and bagel chips and crackers. Like a spicy chicken salad cheese board.

Buffalo Chicken Salad Sandwiches are a heated twist on a sandwich classic. Get a little bit spicy with this chicken salad recipe that works well on sandwiches or as a dip.

Ingredients

  • 1 whole rotisserie chicken, shredded
  • 1 cup celery, diced
  • 1 cup matchstick cut carrots
  • 1 cup Duke’s Mayonnaise
  • ⅓ cup hot sauce, plus more depending on your preferred level of heat
  • 2 tablespoons white vinegar
  • 1 tablespoon granulated sugar
  • ½ teaspoon onion powder
  • ¼ teaspoon granulated garlic
  • ½ teaspoon paprika to garnish

Instructions

  1. Toss together the shredded chicken, diced celery, and matchstick carrots. If you like a spicier chicken salad, you can toss this mixture with hot sauce, to taste.
  2. In a large liquid measuring cup whisk together the Duke's Mayonnaise, hot sauce, white vinegar, granulated sugar, onion powder, and granulated garlic until smooth.
  3. Pour the dressing over the chicken mixture and stir to evenly coat. If you like a "less-dressed" chicken salad, just add the dressing a little at a time until it is your desired consistency. Save the remaining dressing for dipping veggies or pouring over a salad.
  4. Spoon the chicken salad onto soft rolls for sandwiches or serve with crackers and veggies as a dip!
