This Brown Butter Banana Coffee Cake is rich and delicious with a crumbly brown sugar topping. If you are in the market for breakfast cake, this recipe is IT.
Time for cake!!!
Breakfast cake.
Because for some reason I can’t stop myself from making you guys breakfast?
Or from eating cake in the morning.
I served my Black Forest Coffee Cake last Thanksgiving and I think I offered it on the dessert table. It was a hit and was a good change of pie pace. Although… I DO love a good pie recipe.
Anyway. Let’s talk bananas. And brown butter. YEAH! The flavors in this coffee cake really remind me a lot of Bananas Foster. Minus the rum, but you can add rum. That’s fine by me. (If you dig Bananas Foster you should also try these Bananas Foster Milkshakes. Just saying) If you’ve never used brown butter in your cake batter you are in for a real treat. In my opinion, brown butter makes all things exponentially more amazing all year long, but there is definitely something cozy that makes the depth of flavor it adds even more beautiful when the weather has cooled down.
The streusel topping also sets this cake apart. I love a good buttery, crumbly top. This one is rich with brown sugar – my favorite.
Other cakes that are completely acceptable for breakfast right now include this Brown Butter Pumpkin Cake with Vanilla Bourbon Glaze, Apple Butter Spice Cake, and Lemon Yogurt Pound Cake. But Brown Butter Banana Coffee Cake is one you probably have all the ingredients for without extra shopping.
Happy baking!
And Happy Thanksgiving!
