One of the most popular recipes here for 2 years running have been my Buffalo Chicken Lettuce Wraps. They’ve been shared on Pinterest nearly half a million times and have landed on a bunch of health and fitness blogs. So I used my deductive reasoning and figured you guys like things wrapped in lettuce. These BLT Lettuce Wraps have a quick dill sauce I super love. And they are especially good while tomatoes are still in season!
BLT Lettuce Wraps
Ten minutes of work yields a super satisfying meal. BLT Lettuce Wraps are low carb bacon-lover’s treats! Especially while tomatoes are in season!
Ingredients
- 8 slices of lean bacon
- 8 thin tomato slices
- 4 large leaves of lettuce (Boston Bibb lettuce works especially well)
- 1/3 cup plain Greek yogurt
- 1 tablespoon finely chopped fresh dill (or 1 teaspoon dry)
- 1/2 teaspoon kosher salt
- 1 tablespoon water (or as needed to reach your desired consistency)
Instructions
- Cook the bacon and place on paper towels to drain any excess grease.
- Gently wash and dry the lettuce.
- Make the dill sauce by whisking together the Greek yogurt, dill, salt, and water until smooth.
- Assemble the lettuce wraps by adding 2 slices of tomato to each leaf of lettuce. Then add 2 slices of cooked bacon. Drizzle each with the dill sauce.
