Quick and easy Greek Chicken Sliders topped with red pepper hummus, feta cheese, kalamata olives, banana peppers, and spinach. Small enough to have two, good enough to have three.
Real talk: I know I keep giving you chicken recipes on our Fast Food Fridays. I’m sorry! But seriously it’s pretty much all we eat for dinner. I went into this week thinking “I HAVE TO FEED THE PEOPLE SOMETHING BESIDES CHICKEN.”
Clearly I failed. These Greek Chicken Sliders will MORE than make up for my lack of recipes using beef or pork or more veggies. I’ll try again next week, ok? Okay.

P.P.S. If you have a salad bar in your grocery store, that is the fastest, cheapest way to grab olives, spinach, banana peppers, and sliced tomatoes without having to buy a whole jar of everything.

Greek Chicken Sliders
Greek Chicken Sliders are tasty little chicken burgers topped with my favorite Greek salad things! Health and ready in 30 minutes or less!
Ingredients
For the Chicken:
- 1 1/2 - 2 pounds ground chicken
*SEE NOTE*
- 1 tablespoon dried parsley
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- pitted kalamata olives, chopped
- 1 cup baby spinach leaves
- 12 tomato slices (Roma tomatoes are just the right size or you can halve larger tomato slices)
For the Sliders:
- 12 soft slider buns
- roasted red pepper hummus
- 4 ounces crumbled feta cheese
Instructions
Mix together the ground chicken and all the seasonings. Form the mixture into 12 2-3 ounce patties.
Heat the oil in a large skillet. Cook the chicken patties for 3-4 minutes on each side (or until they are cooked through).
To assemble the sliders, spread the top bun of each with the roasted red pepper hummus. Sprinkle the feta cheese onto the hummus so it stays put. Add the cooked chicken patties to the bottom buns. Top with spinach, olives, tomatoes, and banana pepper slices.
Notes
You can use 2 (or 3!) heaping tablespoons of Italian seasoning, Greek seasoning, or my very favorite Greek Freak from Spiceologist. You can also use an Italian blend low sodium variety like Mrs. Dash. Ground chicken really needs the flavor so use what you have, but don't skimp!
