Three weeks in to the year and so far dinner around here has looked pretty doggone amazing. I’m doing this new thing where I try to map out my life and buy all the groceries (except the fresh produce) a few weeks at a time. I also got extra cool and ordered this fantastic planner that is supposed to make my life more simple – I mean, it has my name on it you guys. So far it’s not really working, but I think I get an ‘A’ for effort and my cabinets are full so I guess something good has come of it.
This week’s meals are SUPER. Still kinda light but also cozy. There’s pizza too! You know I love my weekly pizza.
MONDAY
Slow Cooker Tomato Soup from Vegan in the Freezer
I love a good bowl of tomato soup with a grilled cheese sandwich. Mondays are annoying. Slow cooker recipes are not.
Steak and Vegetable Stir Fry from Joyful Healthy Eats
Sometimes diet fads are annoying and hard to understand. But if this is what eating Paleo looks like I can be all in! This gorgeous stir fry is loaded with veggies and tender steak and is totally Paleo-friendly. Delicious and healthy?! Yes. We can do that.
WEDNESDAY
Asian Chicken Salad with Sesame Soy Dressing from The Midnight Baker
Let’s talk about this salad dressing for a sec. Fresh ginger, rice vinegar, sesame oil… DROOL. Plus you can eat the bowl. Bonus points.
Easy Lemon Herb Spaghetti from Sugar Dish Me
This super fast dish is loaded with flavor and is on the table in 20 minutes (or less!!). It would be great with chicken or shrimp, but as-is it’s a fantastic vegan/vegetarian option and I kinda wanna have a little everyday.
FRIDAY
Philly Cheesesteak French Bread Pizza from Lemons for Lulu
I know, I know — pizza on Friday. I’m so original, right? I may not be thinking outside the box, but someone was when they married Philly Cheesteak Sandwiches and French Bread Pizza!!! These are amazing.
SATURDAY
Baked Peachy Chicken Taquitos from Sugar Dish Me
So I realize peaches aren’t really in season, but you can go the canned route. The sweet, the spice — ’tis the season to eat all the appetizers. These are IT.
SUNDAY
Chicken Paprikash from Cooking with Curls
This cozy meal is PERFECT for a Sunday supper. If you have never tried Chicken Paprikash it is kind of like the chicken version of beef stroganoff, but with smoked paprika. It is creamy awesome comfort food at its best!
DON’T FORGET DESSERT!!!!
Cherry Thumbprint Kiss Cookies from Lemons for Lulu
Chopped cherries and a vanilla filling. What?! I know. I’ll have 5. If you are starting to mull over your Valentine’s sweets these will totally do the trick (I know they would win my heart!)
