The best breakfast EVER. Breakfast Burgers with Maple Sriracha Aioli are made with a blend of ground beef and pork sausage. Topped with a fried egg, maple bacon, and the sauce that made me change my mind forever about mayonnaise. These are epic.

I need to start by saying that I have been DYING to share this recipe for Breakfast Burgers with Maple Sriracha Aioli with you for sooooooo long. It’s one of my favorite of… ever. So it seemed like a fitting way to start off the year.
I took some much needed time off over the holiday — I hope you did, too! So now I’m all rested and recharged and full of recipe ideas to infinity. Let’s do this New Year thing.
I feel like Breakfast Burgers with Maple Sriracha Aioli would make like the best tailgating food ever — especially for a daytime game when you get all set up while you’re still nursing your coffee. Or brunch!
You guys know how much I love brunch as evidenced by all the awesome brunch recipes. Breakfast Burgers are now added to the list.
We did breakfast for dinner last night – like full on with stacks of Big Fat Fluffy Pancakes and Warm Herbed Potatoes. The kids were completely thrilled with the idea; I guess I don’t play that card very often so it was like really novel and cool. It’s been a little while since I made these Breakfast Burgers for Food Fanatic, but my boys were equally thrilled when they hit the dinner table. This further proves my theory that breakfast is the Best. Meal. Forever. and Always.
So here’s how these go down. It’ so so easy. I mixed lean ground beef with pork sausage that was seasoned with sage. I got my hands on some maple bacon which — omg your house will smell AMAZING. I used Muenster cheese and the usual suspects: sliced red onions, Roma tomatoes (because they never disappoint me in the off-season), and pretty mixed greens. There’s a fried egg involved because duh, breakfast. But also — an egg on a burger takes it to this whole other level of delicious. And there’s a mini bagel in place of a bun! Breakfast Sliders. Yeahhhhhh.
My favorite part of this whole thing though is the Maple Sriracha Aioli. I don’t do mayonnaise you guys. But this sauce will change your burger eating life.

Aioli or aïoli is a Provençal sauce made of garlic, olive oil, usually egg yolks, and seasonings. There's a LOT of recipe sites misusing food terms incorrectly; this perpetuates misinformation. Delicious recipe, just an unfortunately named one.

From the same Wikipedia article: "Aioli is, like mayonnaise, an emulsion or suspension of small globules of oil and oil-soluble compounds in water and water-soluble compounds. Egg yolk can be used as an emulsifier and is generally used in making aioli today." I publish recipes for home cooks -- they are meant to be approachable and friendly. This is not the Culinary Institute of America; just regular people that like to make and eat delicious food.
